Ingredients-
- Low-fat milk- 2 1/2 cup
- Full-fat milk- 2 cups
- Cornflour- 2 tsp
- Saffron (kesar) strands- 1/4 tsp (Optional)
- Citric acid- 1/4 tsp
- Cardamom/Elaichi powder- 1/4 tsp
- Sugar free- 2 tbsp
- Chopped nuts- 3 tbsp (Optional)
Method-
- In a bowl Combine cornflour in 1 tbsp of low fat milk, mix well.
- In another bowl take 2 tbsp of warm milk, add saffron strands to it and mix well.
- In another bowl combine citric acid with 1 tbsp of water, mix well and keep aside.
- In a pan add low-fat milk and full-fat milk and boil for 8-10 minutes on high flame, while stirring.
- After 10 minutes, reduce the flame to medium and cook till the milk reduces to half its quantity, while stirring in between and scrapping the sides of the pan this will take about 30 minutes.
- Add the saffron mixture prepared in step 2, mix well and cook for 5 minutes on medium flame while stirring occasionally.
- Now add cornflour and citric mixture prepared in step 1 & step 3, mix well.
- Cook till the mixture starts leaving the sides of the pan while stirring continuously it will take about 12 to 14 minutes.
- Once done, switch off the flame, add sugarfree and Cardamom powder. Mix well.
- Transfer this mixture to a plate and let it cool down completely.
- Divide the mixture equally into 15 portions or more and shape it into flat round Pedas.
- Sprinkle chopped nuts on each Peda and press gently.
- Transfer the pedas to an air-tight container and store it in refrigerator.
