Home-made Whipping Cream from Chickpeas Water/Aquafaba (Dairy Free)

Whipping cream is a very essential ingredient when it comes to preparing desserts, cakes and ice creams. Whipping creams which are available in market are costly and are not available everywhere. Chickpeas whipping cream recipe allows you prepare whipped cream at the comfort of your home without using any dairy products.

Chickpeas are a type of legume that offer a range of health benefits. Chickpeas help to increase satiety, boost digestion, keep blood sugar levels stable, increase protection against disease and more. Chickpeas nutrition is a potent package of protein, vitamins and minerals, which is why they are often included in many healing diets and in this recipe we will be using white chickpea water.

Ingredients-

Method-

  1. Soak 250gms of chickpeas in 3 cups of water for minimum 8 hrs.
  2. After 8 hrs drain the water and transfer chickpeas to a pressure cooker.
  3. Add 5 cups of water to the chickpeas, close the lid, turn on heat and cook until 10 whistles.
  4. After 10 whistles lower the flame to medium and cook for another 10 minutes.
  5. Turn of the heat and allow it to cool completely. 
  6. Drain and Collect the cooked chickpeas water in a bowl. Our Aquafaba is ready. 
  7. Now, fill up the ice tray with 1 tbsp of chickpeas water/Aquafaba in each compartment and deep freeze it for 2 hours or until set.

Follow the below steps when you are planning to use the cream immediately or on same day. 

  1. Add 12 deep freezed chickpeas ice cubes in a bowl with 10 tbsp of Powdered Sugar.
  2. With an electric blender, beat the ice cubes and sugar mixture first 2 Minutes on a low speed. (use watch) 
  3. Next 5 Minutes on high speed (use watch and do not over beat the cream) 
  4. Give 3 minute rest to the electric blender by turning it off. 
  5. Again beat the mixture at Low speed for 2 Minutes. 
  6. Your whipped cream is ready, use it on cakes, ice creams or wherever you want to use. 

Notes:

* You can also use mixer for blending the cream. 
* You can make chaat with the boiled Chickpeas or else put them in a zip bag and store in the refrigerator or freezer.
