Woodapple Ice Cream/ Bael Ice Cream Recipe

Ingredients-

  • Bael/Wood Apple pulp- 1 cup (See notes) 
  • Whipping cream- 200 gms
  • Sugar- As needed
  • Cardamom powder or Vanilla Essence- 1/2 tbsp
  • Condensed milk- 1/2 cup
  • Food colour- 2 to 3 drops
  • Chopped dry fruits- 1/2 cup

Method-

  1. Chill the blender and a bowl in refrigerator for 30 mins.
  2. After 30 mins, beat the cream until peaks are formed. 
  3. Add Sugar, food colour, chopped dry fruits,  bael pulp, condensed milk, vanilla essence/Cardamom powder to the cream. Mix gently. 
  4. Once everything is mixed transfer this mixture into an air tight container cover it with a tight lid.
  5. Freeze overnight.

Notes:

* For Wood Apple Pulp-crack it, scoop the pulp and soak it in 1/2 cup water (quantity of water will depend on the size of bael, add enough water just to soak the pulp). Let it sit for an hour. After an hour use a masher or mash it with your hands. Strain the juice and collect it in a bowl, throw the fiber collected in the strainer and use the pulp collected in bowl.
